Ozone has long been considered an effective biocide in both liquid and gas phases.   New research suggests ozone in the gas phase may be able to keep produce such as lettuce free from pathogens.

Research on E. coli transmission showed ozone gas is faster and more effective than chlorinated water at sanitizing leafy greens.  Researchers  say it could be fed into lettuce storage areas operating under cooling vacuums.

The results of the research study were presented at a conference  atteneded by 300 food industry executives, growers and regulators in Monterey, CA. t

The research was funded by Fresh Express after the 2006 E. coli outbreak in spinach that resulted in the deaths three people. and sickened many more.  While Fresh Express was not linked to the 2006 spinach incident, the company funded the researxch as a way to prevent a future outbreak.

Ozone gas is currently used in a wide variety of applications, most prominently drinking water treatment where nearly 30% of the public drinking water systems use ozone in one way or another.  Ozone is also widely used in the food an beverage industry for various sanitizing applications.

Unlike most other biocides ozone is produced on site and eliminates the need to purchase, store or transport chemicals.  The feed source can be air and it is produced in an ozone generator.
